Through out the web you find many companies selling gelato cases and it seems that there is a concerted effort to convince you that in order to serve gelato you need a 12-18 or 24 pan case. Let me explain to you why that thinking is flawed. It most cases adding gelato to an existing operation(cafe, pizza place, restaurant, smoothie bar, bakery, etc.....) you aim at generating sales in the $200 to $500 daily. Of course anything between those two numbers is very profitable except that it translates into 80 to 200 servings that in turn translates into 2 to 4 pans of gelato per day. The draw break in producing these sales with a case that big is simply waste . The waste can eat most of the profit so my suggestion is to use a smaller case (4 to 8 choices) that although not as impressive as many people dream it should be it is none the less on the money . You don't need to spend an arm and leg in order to be able to say gelato served here . The case that I'm offering in this ad is capable of holding 2 large pans(4 or 5 liters) or 4 two liter pans. Believe it or not this setup can yield the sales I mentioned at the beginning of this presentation. You need only to offer two classics(such as vanilla, chocolate or nocciola) and two fruit from a vast variety. One last thing to remember is that adding gelato in such a small scale does not need any apology from the establishment's owner.
