Adamatic Revent Double Rack Gas Fired Oven, model RR1x1GS, sn 9018036-0590, A-Lift. Requires natural gas hook-up, 1/2" water line and 208v/3ph & 115v for controls. Overall dimensions are 100" Long x 93" High x 68" deep (with hood).
Rack ovens are probably the most popular type of baking oven used today, they differ from deck and revolving ovens in that the pans are loaded onto a mobile rack and the whole rack of pans is then loaded and removed from the oven at one time. This is a very efficient system for operators who bake 10 or more pans of the same product at the same time.
Rack ovens come in single or double rack models, the racks are normally sold seperately and are specific to each oven manufacturer and the type of rack they use. The actual pan capacity of the oven will vary depending on the pan spacing of the particular rack one uses. This is usually 10 to 20 pans for a single rack oven or 20 to 40 pans for a double rack oven. Using different racks with different spacing allows the rack oven to be very flexible and still handle different product sizes. The heating system used in a rack oven is the convection type which circulates the heated air by fan oven the product being baked and then recycles it back to the heating chamber. This type of heating system is very efficient and the operating costs for a rack oven can be as much as 25% less then a comparable revolving oven. Even baking of the product however can be more difficult with rack ovens, especially when using a rack with close spacing . This problem is addressed by using air vents inside the baking chamber which can be adjusted depending on the type and spacing of the product being baked. The rack also turns while it is in the oven which helps minimize uneven baking.
An additional benefit of the rack oven design is that the overall oven size is very compact compared to revolving ovens. All rack ovens come with a built in steam generating system. Steaming the product while baking, in conjuction with convection heat, is the perfect combination to produce crusty bread products. The exterior and interior of most rack ovens are covered in stainless steel, which is easy to clean and holds up to the moisture of steam.
