This is a Super Systems Electric Combination Convection Oven / Proofer model OP3-BL. Both oven and proofer are controlled separately. Oven holds 3 pans and proofer holds 9 pans. separate heat and humidity controls in proofer. High volume blower in proofer circulates heat and humidity efficiently in proofer. The oven interior is constructed of heat retentive 18 gauge aluminum steel with .190 aluminum decks. The proofer is constructed of 18 gauge type 304 stainless steel. Oven works with "Heat Sink" principle and "Natural Convection" technology. Oven bakes with radiant heat and conduction, and has a heat reflective tempered glass door. Proofer has a thermostatically controlled 750 watt element for creating heat and an infinitely controlled humisdistat 1250 watt burner element for creating moisture. Oven holds 3 - 18" x 26" sheet pans, 6 - 4 strapped 1 lbs. bread pans, 6 - 4 strapped 1.5 lbs. bread pans, 18 nine inch pies, 3 eighteen inch pies or any pie combination. Maximum oven temp is 450 F. Proofer holds 9 wire racks, 9 standard 18" x 26" sheet pans, 8 - 4 strapped 1lbs. bread pans, 8 - 4 strapped 1.5lbs. bread pans or any bread pan combination. All door seals and glass are good. Unit has been tested and is in good working condition. 208 volts, 60 Hz, 1phase. You will not be dissapointed.
